Vanilla Bean Macarons

Ingredients:

- 1 cup almond flour

- 1 3/4 cups powdered sugar

- 3 large egg whites, at room temperature

- 1/4 cup granulated sugar

- 1 teaspoon vanilla bean paste or vanilla extract

Instructions:

1. In a food processor, pulse the almond flour and powdered sugar until well combined and finely ground. Sift the mixture into a large mixing bowl and set aside.

3. Gently fold the egg white mixture into the almond flour mixture using a rubber spatula. Be gentle to retain the air in the batter.

4. Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small circles, about 1.5 inches in diameter, onto a parchment-lined baking sheet.

5. Let the piped macarons sit at room temperature for about 30 minutes to form a thin crust on the surface. This will help create the characteristic macaron feet.

6. Preheat your oven to 300°F (150°C). Bake the macarons for 12-15 minutes until they are set and easily lift off the parchment paper.

7. Allow the macarons to cool completely on the baking sheet before gently removing them.

7.3. Filling Recipe: Vanilla Bean Buttercream

Ingredients:

- 1/2 cup unsalted butter, softened

- 2 cups powdered sugar

- 1 teaspoon vanilla bean paste or vanilla extract

- 1-2 tablespoons milk or heavy cream

Instructions:

1. In a mixing bowl, beat the softened butter with an electric mixer until smooth and creamy.

2. Gradually add the powdered sugar to the butter, mixing on low speed until well combined.

3. Add the vanilla bean paste or vanilla extract and continue to mix until the filling is smooth and fluffy.

4. If the filling is too thick, add milk or heavy cream, one tablespoon at a time, until the desired consistency is reached. The filling should be thick enough to hold its shape but not too stiff.

5. Transfer the filling into a piping bag fitted with a round tip.

Assembly:

1. Pair up the cooled macaron shells of similar size.

2. Pipe a small amount of vanilla bean buttercream onto the flat side of one macaron shell.

3. Gently press the flat side of the second macaron shell onto the filling to create a sandwich.

4. Repeat the process for all the macaron shells.

5. Let the filled macarons rest in the refrigerator for at least 24 hours to allow the flavours to meld and the texture to soften.

7.4. Chocolate Ganache Filling

Ingredients:

- 1 cup heavy cream

- 8 ounces semi-sweet or bittersweet chocolate, finely chopped

- 2 tablespoons unsalted butter, softened (optional, for added richness)

Instructions:

1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove the saucepan from the heat just before it starts boiling.

2. Place the finely chopped chocolate in a heatproof bowl.

3. Pour the hot cream over the chopped chocolate and let it sit for about 1 minute to allow the chocolate to soften.

4. Gently whisk the chocolate and cream together until the mixture becomes smooth and glossy. If the chocolate doesn't completely melt, you can place the bowl over a pot of simmering water (double boiler) and continue to gently stir until fully melted.

5. If desired, stir in the softened butter until fully incorporated. The butter adds extra richness to the ganache, but you can omit it if you prefer a lighter texture.

6. Let the ganache cool at room temperature until it thickens to a spreadable consistency. You can also place it in the refrigerator for a quicker setting, stirring occasionally to maintain an even texture.

Assembly:

1. Pair up the cooled macaron shells of similar size.

2. Pipe or spread a small amount of chocolate ganache onto the flat side of one macaron shell.

3. Gently press the flat side of the second macaron shell onto the ganache to create a sandwich.

4. Repeat the process for all the macaron shells.

5. Let the filled macarons rest in the refrigerator for at least 24 hours to allow the flavours to meld and the texture to soften.

Flaky Gluten-Free Croissants

Ingredients:

For the Croissant Dough:

- 2 cups gluten-free all-purpose flour blend

- 1/4 tsp additional xanthan gum

- 1/4 cup granulated sugar

- 1 teaspoon salt

- 1 package (2 1/4 teaspoons) active dry yeast

- 3/4 cup warm milk (110°F/43°C)

- 2 large eggs, room temperature

- 1/2 cup unsalted butter, softened

- 1 tablespoon vegetable oil

For the Butter Layer:

- 1 cup unsalted butter, cold

Instructions:

1. In a large mixing bowl, whisk together the gluten-free flour blend, granulated sugar, and salt.

2. In a separate small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until it becomes frothy.

3. Add the yeast mixture and the eggs to the dry ingredients. Mix until a dough forms.

4. Add the softened butter to the dough and knead it until well combined and smooth.

5. Shape the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with plastic wrap or a damp kitchen towel and let the dough rise in a warm, draft-free place for about 1 to 2 hours until it doubles in size.

6. While the dough is rising, prepare the butter layer. Place the cold butter between two sheets of parchment paper and use a rolling pin to pound it into a flat, rectangular shape about 1/2 inch thick. Refrigerate the butter layer until firm.

7. Once the dough has risen, punch it down and transfer it to a lightly floured surface. Roll it out into a large rectangle about 1/4 inch thick.

8. Place the chilled butter layer in the centre of the dough and fold the sides of the dough over the butter, encasing it completely.

9. Roll the dough out into a long rectangle again, about 1/4 inch thick. Then, fold the dough into thirds like a letter (tri-fold).

10. Wrap the dough in plastic wrap and refrigerate it for 30 minutes to allow the butter to firm up.

11. Repeat the rolling, folding, and chilling process two more times, allowing the dough to rest in the refrigerator for 30 minutes between each turn.

12. After the final turn, refrigerate the dough for at least 4 hours or overnight.

13. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

14. On a lightly floured surface, roll out the chilled dough into a large rectangle, about 1/4 inch thick. Cut the dough into triangles.

15. Gently stretch each triangle and roll it up from the wide end to the tip to form the classic croissant shape.

16. Place the shaped croissants on the prepared baking sheet and brush them with a beaten egg for a golden finish.

17. Bake the croissants for about 15-20 minutes or until they are puffed up and golden brown.

18. Allow the croissants to cool slightly before serving. Enjoy these flaky croissants with your favourite sweet or savoury fillings, or simply savour them as they are.

Note: These are the most difficult recipes in this book, especially if you have never made croissants before. If they don't turn out the first time, consider watching some online videos of how croissants are made. Or consider adjusting your binders, or using a different flour blend. But most of all, keep trying.

7. Press the circles into a muffin tin to form tart bases. Place the cut-out cookies on the prepared baking sheet. Bake both for about 10-12 minutes or until they are lightly golden.

8. While the cookies and bases are baking, prepare the almond frangipane filling. In a bowl, beat together the almond flour, softened butter, powdered sugar, egg yolk, and almond extract until smooth and creamy.

Vegan Lemon Raspberry Bars

Crust Ingredients:

- 1 cup gluten-free rolled oats

- 1 cup almond flour

- 1/4 cup coconut oil, melted

- 3 tablespoons maple syrup

- Pinch of salt

Filling Ingredients:

- 1 cup fresh or frozen raspberries

- 1/4 cup lemon juice

- 1 tablespoon lemon zest

- 1/3 cup coconut cream (the solid part from a can of full-fat coconut milk)

- 2 tablespoons maple syrup

- 2 tablespoons arrowroot powder (or cornstarch)

Instructions:

1. Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

2. In a food processor, blend the rolled oats until they reach a flour-like consistency. Add almond flour, melted coconut oil, maple syrup, and a pinch of salt. Pulse until the mixture forms a crumbly dough.

3. Press the crust mixture firmly into the bottom of the prepared baking dish.

4. Bake the crust in the preheated oven for about 12-15 minutes, or until it turns golden brown. Remove from the oven and let it cool while you prepare the filling.

5. In a blender or food processor, blend the raspberries until smooth. Strain the raspberry puree through a fine-mesh sieve to remove the seeds.

6. In a small saucepan, whisk together the raspberry puree, lemon juice, lemon zest, coconut cream, maple syrup, and arrowroot powder (or cornstarch) over medium heat. Continue whisking until the mixture thickens and becomes smooth.

7. Pour the raspberry lemon filling over the cooled crust, spreading it evenly.

8. Return the baking dish to the oven and bake for an additional 10-12 minutes, or until the filling is set.

9. Remove the bars from the oven and let them cool in the pan for about 15-20 minutes before transferring them to a wire rack to cool completely.

10. Once cooled, slice the lemon raspberry bars into squares and enjoy the sweet-tart flavours of these delectable vegan treats.
