Elevate your pasta game with this vibrant and nutritious homemade gluten-free spinach pasta. Blended with a puree of fresh spinach, this pasta not only boasts a beautiful green colour but also adds a subtle earthy flavour. The process of making this pasta from scratch allows you to customize the thickness and shape, making it a truly special dish.
Ingredients:
- 2 cups fresh spinach leaves
- 2 cups gluten-free all-purpose flour, plus extra for dusting ** see note
- 3 large eggs
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 2 cups fresh basil leaves, packed
- 2 tbsp lemon juice
- 1/3 cup pine nuts
- 2 cloves garlic
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
Instructions:
1. To make the spinach pasta, start by blanching the spinach leaves in boiling water for about 1 minute until they wilt. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, squeeze out any excess water from the spinach.
2. In a food processor or blender, puree the blanched spinach until smooth.
3. In a large mixing bowl, combine the gluten-free all-purpose flour and salt. Create a well in the centre and add the pureed spinach, eggs, and olive oil.
4. Using a fork or your hands, gradually mix the wet ingredients into the flour until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. If the dough feels too sticky, add a little more flour as needed.
5. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes to relax the gluten-free flour.
6. While the dough is resting, prepare the basil pesto sauce. In a food processor, combine the basil leaves, lemon juice, pine nuts, garlic, and Parmesan cheese. Pulse until the ingredients are finely chopped. With the processor running, slowly drizzle in the olive oil until the pesto becomes smooth and well combined. Season with salt and pepper to taste.
7. Roll out the rested pasta dough on a floured surface using a rolling pin or a pasta machine until it reaches your desired thickness. Cut the pasta into your preferred shape, such as fettuccine, tagliatelle, or pappardelle.
8. Bring a large pot of salted water to a boil and cook the pasta for about 2-3 minutes or until it floats to the surface. Drain the pasta and toss it with the prepared basil pesto sauce.
9. Serve the gluten-free spinach pasta with additional grated Parmesan cheese and a sprinkle of fresh basil leaves for an extra burst of flavour.
Note: For my flour mix I like a mixture of equal parts white rice flour, brown rice flour, corn starch and tapioca, and I use psyllium husk and a small amount of xanthan gum.
- Instead of spinach, you can use any vegetable, or omit them entirely.
- You may need to add more flour or a small addition of water, depending on what vegetables you use.
- Lemon juice is not traditional in pesto but helps to retain a bright colour. You may omit it if desired.
Ingredients:
For the Rice Noodles:
- 1 cup rice flour
- 1 tablespoon tapioca starch (optional, for added chewiness)
- 1 cup water
- Pinch of salt
For the Pad Thai:
- 8 oz gluten-free rice noodles (store-bought or homemade)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 cup firm tofu, cubed
- 2 large eggs (skip for a vegan version)
- 1 cup bean sprouts
- 1/2 cup sliced carrots
- 1/2 cup sliced bell peppers
- 3 green onions, sliced
- Lime wedges, for serving
- Fresh cilantro for garnish
- Sesame seeds for garnish
- 1/4 cup crushed peanuts
For the Pad Thai Sauce:
- 3 tablespoons tamari or gluten-free soy sauce
- 2 tablespoons tamarind paste
- 2 tablespoons coconut sugar or brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon chilli sauce (adjust to your spice preference)
Instructions:
1. Prepare the Rice Noodles:
A) In a large mixing bowl, combine the rice flour and tapioca starch (if using). Create a well in the centre and add the water.
B) Using a fork or your hands, gradually mix the water into the flour mixture until a dough forms.
C) Knead the dough on a floured surface for about 5 minutes until smooth and elastic. If the dough feels too sticky, add a little more flour as needed.
D) Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes to relax the flour.
E) Cut the dough into strips and roll out into long flat strips. Fold the dough back onto itself 2-3 times to create texture. Use a pasta roller to roll it even and thin.
F) Bring plenty of water to a boil and cook for 3-5 minutes. Once the noodles are cooked and separated, set them aside.
2. Prepare the Pad Thai Sauce:
In a small bowl, whisk together the tamari or gluten-free soy sauce, tamarind paste, coconut sugar, rice vinegar, and chilli sauce until well combined. Adjust the taste according to your preference for sweet, sour, and spicy flavours.
3. Cook the Pad Thai:
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and cubed tofu, and stir-fry for about 2 minutes until the tofu is lightly browned.
4. Push the tofu and garlic to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked, and then mix them together with the tofu.
5. Add the sliced carrots and bell peppers to the skillet, and stir-fry for another 2 minutes until the vegetables are slightly tender.
6. Add the rice noodles to the skillet, followed by the prepared Pad Thai sauce. Toss everything together, ensuring the noodles are evenly coated with the sauce.
7. Stir in the bean sprouts and sliced green onions, continuing to cook for another 1-2 minutes until the bean sprouts are slightly softened.
8. Remove the skillet from heat and garnish the Pad Thai with sesame seeds, crushed peanuts and fresh cilantro.
9. Serve the Pad Thai with lime wedges on the side for an extra burst of tanginess.

Ingredients:
- 2 large eggplants, sliced into 1/4-inch rounds
- 1 cup gluten-free bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 cup gluten-free marinara sauce
- 1 cup shredded mozzarella cheese

- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Place the sliced eggplant rounds on a paper towel and sprinkle with salt. Let them sit for about 15 minutes to release excess moisture. Pat the eggplant slices dry with another paper towel.
3. In a shallow dish, mix the gluten-free bread crumbs with grated Parmesan cheese. In a separate shallow dish, beat the eggs.
4. Dip each eggplant slice into the beaten eggs, then coat it with the bread crumb mixture, pressing gently to adhere the crumbs to the eggplant.
5. Place the breaded eggplant slices on the prepared baking sheet. Drizzle them lightly with olive oil.
6. Bake the eggplant slices in the preheated oven for 20-25 minutes, or until they are golden and crispy.
7. In a baking dish, spread a thin layer of gluten-free marinara sauce. Arrange a single layer of baked eggplant slices on top of the sauce.
8. Sprinkle some shredded mozzarella and grated Parmesan cheese over the eggplant slices. Repeat the layers, finishing with a layer of marinara sauce and cheese on top.

11. Let the Eggplant Parmesan rest for a few minutes before serving. Garnish with fresh basil leaves.
12. Serve with a side of gluten-free pasta and extra marinara sauce, if desired.
